If you have been following my Black Dog Chronicles, you’d know about my Chakna fiasco. Oh, well, I am a fast learner and I knew that drinks are always meant to be served with accompaniments. And particularly those that bring out the flavours of the tasting notes. Yes, I had been well-informed, and by the best. But what happens when guests land up unannounced. Worse, your stock of chakna has been exhausted! And all you have is a packet or two of salted biscuits……
Well, then this is what you do. First, hope and pray that the guests don’t stay long. If that does not work, go to the kitchen and pull out all these ingredients. Any respectable kitchen ought to have these in stock.
Monaco Biscuits – 2 packets (for base)
Cheese Spread – 1 cup
Cheese cubes – 2 (grated)
Two Onions – finely chopped
One Tomato – finely chopped
Coriander – for garnishing
Salt and Pepper to taste
Mix the finely chopped onions and tomato with the cheese spread, making sure that the mixture does not get too runny. Grate in the cheese cubes for consistency. Add the salt and pepper to taste and garnish with coriander. Use the Monaco biscuits in place of crepes that you forgot to stock. Place a tbsp of the mixture on each biscuit. Serve as a delightful accompaniment to uninvited guests.
And as much as your well read head will tell you that cheese is meant to be a pairing with wine, don’t listen. Well, wine yes, but Speyside whiskies like Black Dog pair very well with rich cheese. The onion and tomato mixture add the zing, while pepper adds the spice. If you want to get more adventurous, you can also throw in a bit of red chilli powder and voila, you have a hot winner on hand.
Yes, we live in the times of quick fixes, indeed.
